Our Best Never Fail Sweet Potato Pie

1 (15 oz) can Princella or Sugary Sam Cut Sweet Potatoes, drained and mashed
3/4 cup butter
2 1/4 cup sugar
6 eggs, beaten
1 Tbsp. cinnamon
6 Tbsp. cornstarch
15 oz evaporated milk
3 tsp vanilla
1/2 tsp salt
1 (9-inch) pie shell, unbaked


Preheat oven to 400°F. Cream butter and sugar together. Add eggs and stir. Add sweet potatoes and mix well. Add cinnamon and cornstarch. Stir in milk, vanilla, and salt, making sure all ingredients are thoroughly mixed. Pour into pie shell and bake 15 minutes at 400°F. Lower heat to 350°F. Cook until knife comes out clean (20-30 minutes).

Cook's Note: For COCONUT SWEET POTATO PIE, prepare same as above, adding 1/2 to 3/4 cup coconut to taste.
