Popeye Easy Spinach Quiche

Popeye Easy Spinach Quiche

Difficulty:Easy Preparation Time: 60 minutes

Ingredients

Popeye Spinach
  • 1 (13.5 oz) can Popeye Spinach, very well drained
  • 1 10-inch unbaked pie crust
  • 1/4 cup cheddar cheese, grated
  • 1/4 cup swiss cheese, grated
  • 5 eggs, beaten
  • 1 cup 2% milk
  • 1 slice red or mild onion, diced
  • 1 roma tomato, thinly sliced

Directions

Preheat oven to 425°F. Prepare crust according to package directions. Sprinkle cheese on pie crust. Mix eggs, milk, and spinach, and onion; pour mixture evenly over cheese. Top with slices of tomato. Bake for 15 minutes; reduce heat to 350°F and bake for an additional 20 to 25 minutes until set, or a toothpick inserted in center comes out clean. Remove from oven and let stand 10 minutes. Serve warm with fruit.

Difficulty:Easy Preparation Time: 15 minutes

Ingredients

Popeye Spinach
  • 1 (13.5 oz) can Popeye Spinach, drained
  • ½ cup plain yogurt
  • ½ cup cottage cheese
  • 1 sliced green onion
  • 1 tsp chili powder
  • ½ tsp dill weed

Directions

Combine yogurt and cottage cheese, and stir until smooth. Stir in spinach, onion, chili powder and dill weed. Place in serving dish. Cover and chill until ready to serve with fresh vegetables, crackers, or bread sticks.

Cheesy Veg-All Quesadillas

Cheesy Veg-All Quesadillas

Difficulty: Easy Preparation Time: 30 min

Ingredients

Veg-All Original Mixed Vegetables
  • 1 (15 oz) can Veg-All Original Mixed Vegetables, drained
  • Vegetable oil
  • 6 8-inch flour tortillas
  • 1 (4 oz) can green chilies, drained
  • 1 cup Mexican cheese blend, shredded
  • 1/4 cup fresh cilantro, chopped

Directions

Preheat oven to 350°F. Pour oil into frying pan, 1/4-inch deep; heat to 375°F over high heat. Fry tortillas in oil one at a time. While tortilla shell is still pliable, push edges of tortilla with tongs along sides of pan to form a rim 1-3 inches high. When tortilla is golden and crisp, remove from oil and drain rim side down on paper towels. Allow to cool. Place tortillas on baking sheet rim side up. Divide and layer Veg-All, chilies, and cheese between two tortilla shells. Garnish with cilantro. Bake just until cheese melts. Serve warm.

Chocolate Chip Sweet Potato Bars

Difficulty:Easy Preparation Time: 45 minutes

Ingredients

Princella and Sugary Sam Sweet Potatoes
  • 1 (15 oz) can Princella or Sugary Sam Mashed Sweet Potatoes or Cut Sweet Potatoes, drained and mashed
  • 2 cups flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 eggs, beaten
  • 1 1/2 cups sugar
  • 1 cup cooking oil
  • 2/3 cup mini chocolate chips
  • 1 can chocolate frosting

Directions

Preheat oven to 350°F. Sift together flour, baking powder, cinnamon, soda and salt; set aside. In another bowl, combine eggs, sweet potatoes, sugar and oil; beat until combined. Add dry ingredients; beat until well combined. Stir in chocolate chips. Spread batter in un-greased 10 x 15 inch baking pan. Bake for 25 to 30 minutes. Cool. Frost with chocolate frosting. Cut into bars.

Allens Better Butter Bean Burger

Difficulty:Easy Preparation Time: 1 hour

Ingredients

allens butter beans
  • 1 1/2 (15.5 oz) cans Allens Butter Beans, drained
  • 1 1/2 small onion, chopped
  • 1 Tbsp and 1 1/2 tsp finely chopped jalapeño pepper
  • 9 saltine crackers, crushed
  • 1 egg, beaten
  • 3/4 cup shredded cheddar cheese
  • 1/4 tsp garlic powder
  • salt and pepper to taste
  • 1/4 cup and 2 Tbsp vegetable oil

Directions

In a medium bowl, mash butter beans. Mix in onion, jalapeno pepper, crushed crackers, egg, cheese, garlic powder, salt, and pepper. Divide into 4 equal parts, and shape into patties. Heat oil in a large skillet over medium-high heat; use more or less oil to reach 1/4 inch in depth. Fry patties until golden, about 5 minutes on each side. Serves 6.

More Peas Please Casserole

Difficulty:Intermediate Preparation Time: 45 minutes

Ingredients

Freshlike Tender Garden Sweet Peas
  • 1 (15 oz) can Freshlike Tender Garden Peas, drained
  • 1/2 cup Onion, chopped
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1 cup water chestnuts, diced
  • 1 cup celery, diced
  • 1/2 cup butter, melted
  • 1 cup bread crumbs, toasted

Directions

Preheat oven to 350°F. In a medium mixing bowl, combine peas, onion, soup, water chestnuts and celery. Pour into a 2-quart casserole. In a small mixing bowl, combine melted butter and bread crumbs. Sprinkle over top of casserole. Bake 30 to 35 minutes.
