Five Bean Salad

Difficulty: Easy Preparation Time: 30 minutes

Ingredients

Allens Black Beans
  • 1 (15 oz) can Allens Lima Beans, drained and rinsed
  • 1 (15.25 oz) can Allens Black Beans, drained and rinsed
  • 1 (15 oz) can Trappey Red Kidney Beans, drained and rinsed
  • 1 (15 oz) can Allens Garbanzo Beans, drained and rinsed
  • 1 (15 oz) can Freshlike Green Beans, drained
  • 1 cup carrot, sliced
  • 1 cup celery, sliced
  • 1 medium red onion, diced
  • 1/2 cup italian dressing (may use light)

Directions

In large mixing bowl, combine all ingredients, mix well. Chill before serving.

Chunky Veg-All Salsa

Chunky Veg-All Salsa

Difficulty: Easy Preparation Time: 30 minutes

Ingredients

Veg-All
  • 1 (15 oz) can Veg-All Original Mixed Vegetables, drained
  • 1 (16 oz) jar salsa
  • 1 Tbsp. fresh cilantro, chopped

Directions

In medium bowl, stir together salsa, Veg-All and cilantro. Cover and refrigerate for at least 20 minutes to allow flavors to blend. Store in refrigerator.

Note: Accompany with tortilla chips, toasted pita triangles or fresh veggies. Or layer with shredded lettuce, cream cheese, refried beans, shredded cheddar cheese and sliced ripe olives for a layered Mexican-style chip dip.

Difficulty:Easy Preparation Time: 15 minutes

Ingredients

Veg-All
  • 1 (15 oz) can Veg-All Original Mixed Vegetables, drained
  • 1 medium onion, coarsely chopped
  • 1 cup ham cubes
  • 2 cups cooked rotini pasta
  • 3 Tbsp italian dressing

Directions

Combine and toss lightly. Serve on bed of lettuce.

Diggity Dog Veg-All Biscuits

Diggity Dog Veg-All Biscuits

Difficulty:Easy Preparation Time: 25 minutes

Ingredients

Veg-All
  • 1 (15 oz) can Veg-All Original Mixed Vegetables, drained and mashed
  • 3 cups dry biscuit mix
  • 1/3 cup whole milk
  • 2 hot dogs, chopped
  • 1/2 cup mild cheddar cheese, shredded
  • 1/4 tsp. garlic salt
  • 1 Tbsp. fresh parsley, chopped

Directions

Preheat oven to 400°F. Combine all ingredients into a large mixing bowl and stir until mixture forms a moist dough. Drop about 1/3 cup of dough at a time onto a greased cookie sheet. Pat down lightly with the back of a spoon. Bake for 10-15 minutes or until golden brown. Remove and let cool for 5 minutes.
Note: Great way to get kids to eat vegetables without them knowing it. Serve with butter or ketchup.

Delicious Carrot Cookies

Carrot Cookies

Difficulty: Easy Preparation Time: 30 minutes

Ingredients

Freshlike Crinkle Cut Carrots
  • 1 (14.5 oz) can Freshlike Crinkle Sliced Carrots, drained and mashed
  • 1 cup shortening
  • 3/4 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 3/4 cup shredded coconut

Directions

Preheat oven to 400°F. Lightly grease cookie sheet. In a large mixing bowl, combine shortening, sugar, eggs and carrots. Blend in flour, baking powder, salt, cinnamon and nutmeg. Stir in coconut. Drop by teaspoonfuls onto cookie sheet, about 2" apart. Bake 8 to 10 minutes, or until no imprint is left when touched lightly; do not over-bake.
